An alternative roast, The King Arthur Roast is taken from the chuck. It isn't the prettiest of meat cuts, but when cooked slowly it has a beautiful flavour. It has a nice amount of inter muscle fat that melts during cooking to produce a lovely moist joint.
We are able to trace this Luing beef all the way back to its birth farm on the beautiful Isle of Oronsay on the west coast of Scotland, before being spending its later month's grazing on the lush grass in South Lanarkshire, only 30 miles from our butchery.
We have dry aged this beef using traditional methods and Gerry our head butcher has been key in monitoring its progress. We will age it for a minimum of 21 days, but then after that Gerry will decide when it is ready as each piece of beef will age differently. This is a skill Gerry has honed over 30 years in the industry. He will look at many different factors when deciding when the beef will be at its pinnacle in flavour and texture.

How to cook
All raw meat products must be cooked thoroughly until they are piping hot.
Packaging
Your meat order is kept cool in transit because we either use an insulated expanded polystyrene box, or a recyclable tough corrugated cardboard box which is foil lined and insulated with bubble wrap. Both boxes are leak-proof and sturdy.
To keep your delivery cool, it is packed along with specially designed ice packs. Our ice packs are made with a frozen water-based gel, which keeps the meat at the correct temperature for up to 48 hours. When the ice does melt, it stays as a gel, which prevents the delivery becoming wet.
